Below are a few simple to make dishes whilst on your camping trip. Quantities can be modified according to number of people on the trip.
Camp Kebabs
- 3 tbsp cooking oil
- 2 tbsp soy sauce
- 1 tbsp Italian salad dressing
- 1 tsp garlic powder
- 1 lb sirloin steak cut into cubes
- Assorted vegetables (mushrooms, onions, red and green pepper)
Combine the spice and liquid ingredients in a plastic bag. Add the steak. Place in a cooler for about 3 hours. Place on skewers with veggies. Grill for 15 minutes.
Chicken & Vegetables (done in foil)
- Chicken
- Carrots
- Potato
- Onion
- Butter
- Seasoning
Get some heavy duty aluminium foil and place half a chicken into the centre of the foil. Use any kind of seasoning you prefer but chicken seasoning and garlic is good. Cut two carrots in half, one potato into 4 slices and a medium sized onion into four slices. Place vegetables around the chicken. Put about 3 tbsp of butter onto the vegetables with a little seasoning of your choice. Bring sides of the foil together and make 3 to 4 folds until the foil can no longer be folded. Fold the ends the same way. Place onto hot coals for 15 minutes then flip over for another 15 minutes. Check with fork to see that chicken is done. If not, put back on coals and keep checking until done. Boneless, skinless chicken works best. Serve with boiled rice.
Barbecue Beef
- 1 lb ground minced beef
- 1 bottle of ketchup
- 1 small onion
- 1 garlic clove
- 1 small green pepper
- Salt and pepper (to taste)
Brown the ground beef in a frying pan or similar. Pour off grease. Add onion, garlic and green pepper and cook until onion is transparent. Add ketchup until you get a good consistency. Add salt and pepper than simmer for 10 minutes. Serve on hamburger buns.
Campside Hash
- Potatoes
- Bacon
- Eggs
Fry bacon in a pan over hot coals. Take bacon out and add sliced potatoes (you can also use frozen hash browns) Season to taste. Cook until done. Add crumbled bacon back into the potatoes. Whisk up eggs with a little milk or water, add to potatoes and cook until done.
Chilli (something a little more elaborate)
- 1 lb minced beef
- 1 large onion
- 1 to 2 tsp of hot chilli (depending on how hot you want it)
- 1 tsp paprika
- 1 tsp oregano
- 1 tsp cumin
- 1 clove garlic
- 1 tin of chopped tomatoes
- 1 tin of red kidney beans (baked beans will do)
- 1 red and 1 green pepper
Brown the minced beef then remove it from the pan, just leaving the oil in the pan that has come out of the beef. Chop the onion and soften in the oil. Drain off any excess oil and add the beef, the various spices and tinned tomatoes. Remove the seeds from the peppers, dice the flesh and add to the pan. Leave to simmer for half an hour. Whilst simmering, prepare a crisp green salad. Then add the beans (don’t forget to drain the kidney beans first), leave to simmer for a further 20 minutes and serve with crusty bread and a green salad.
